Mmm…guacamole. It’s probably the single most favorite condiment of mine. Not surprising considering that one of my favorite snacks is eating and avocado drizzled with olive oil and pepper.
Guacamole makes any dull meal extra happy. At least that’s my opinion. 😉
Trying to eat tacos, burritos, fajitas, taco salad, etc. without guacamole is a sad day. Like literally. Make me frown.
Okay okay, maybe not that bad, but pretty darn close!
This is a very quick and easy guacamole recipe. Most of the time, guacamole is something rather difficult to mess up I would think, but then again, I’ve had some pretty bad guacamole. Let me tell you…now THAT is definitely a sad day.
Okay, so enough with the fluff and let me get on with it.
- 3 Avocados – peeled, pitted, and mashed
- 1 Lime, juiced
- 1 teaspoon kosher salt
- ½ cup diced red onion
- 3 tablespoons chopped fresh cilantro
- 2 Roma (plum) tomatoes, diced
- 1 teaspoon minced garlic
- ½ jalapeno, seeded and minced
- 1 pinch ground cayenne pepper (optional)
In a bowl, mash avocado, lime juice, and salt together. Then add in the cilantro, garlic, and tomatoes. Add a pinch of cayenne pepper if desired. Serve immediately, or refrigerate for 1 hour for the best taste.
Notes: if you need a kid friendly version of this recipe (which a lot of times I do), simply remove the onion, cilantro, tomatoes, and jalapeno portion. In other words, all the other good stuff. 😉
TIP: Are you also making Pico De Gallo as well? If so, a great and lazy version of this recipe is after mashing together the avocado, lime juice, and salt together, simply stir in Pico De Gallo to the mixture instead of adding all the other ingredients. I would suggest adding the pico 1 tablespoon at a time to your guacamole mixture until you are satisfied with the texture and taste. 🙂
